GARAM MASALA literally means “hot spices”, as this blend of different spices warms the body. Garam masala goes well with almost all dishes – it gives them the special spicy aroma that has made Indian cuisine famous the world over. When the dish is almost ready, you can simply sprinkle a little of the mixture on top.
Recipe – Rice with vegetables
Wash 1 cup of rice, drain in a colander. Heat a little oil or margarine in a pot, add the chopped onion and garlic, fry gently. Add 2 cups of finely chopped vegetables (peppers, carrots, cauliflower) and stir-fry for 4-5 minutes. Add 1 teaspoon of garam masala, stir and fry for another minute. Add the rice, mix again. Add 2 cups of water and 1 teaspoon of salt, stir again, bring to the boil. After reducing the heat, simmer for a further 10-15 minutes (depending on the type of rice) until the rice absorbs all the water and becomes soft and fluffy. Serve with green peas or lemon slices.
