HERBAMARE herb salt has a wonderful taste of fresh herbs and vegetables. Freshly harvested organic ingredients are stored for several months with natural sea salt to allow the salt to release its aroma and essential oils. The ingredients are then thoroughly vacuum-dried and blended according to Alfred Vogel’s original recipe.
HERBAMARE herbal salt does not contain glutamate, artificial flavour enhancers or anti-caking agents.
HERBAMARE captures the taste of the turquoise waters of the coast of southern France. This sea salt comes from Camargue, a few kilometres south-west of Nice. Salt has been produced here since Roman times. Until now, salt has been produced in the traditional way. As a result, this salt naturally retains minerals and trace elements. One of these is seaweed (brown seaweed), which has stable levels of iodine, calcium and iron. Seawater is channelled through a system of closed channels, into shallow pools called salinas. The sun and the wind are still letting months evaporate. The salt crystals remain, which after harvesting are further cleaned with water, dried and finally finely ground. Unlike conventional salt production, salt does not undergo any chemical treatment. It is neither bleached nor refined.
Vegetables and herbs are cultivated in the Alsace region of France, famous for its white wines and culinary cuisine. The ingredients are organically grown, certified by local inspection bodies and processed within eight hours of harvesting to preserve content and flavour. Processing takes place in Colmar, Alsace. To ensure freshness, all vegetables and herbs must be delivered and processed within eight hours of harvest. When the vegetables and herbs arrive at the factory, their weight and quality are checked. Each vegetable and herb is finely chopped and mixed separately with the sea salt in a ratio of 1/3 vegetable to 2/3 sea salt. This process is called maceration. It will keep for 4-12 months, depending on the vegetable or herb. During this time, the sea salt extracts aromas, essential oils and other substances from the raw material, giving Herbamare spices their unique flavour.
After the preservation process, the resulting mixture is dried on vacuum drying pans at a low temperature to preserve the taste of sea salt. The salt is crushed and finely ground. Finally, different salt mixes are blended according to Alfred Vogel’s recipe to create different variations of Herbamare.
Herbamare herb salt is packaged in biodegradable cardboard with a reusable lid.
