What is a star anise?
Star anise is actually the dried fruit of a tree known scientifically as Illicium verum. It takes a year to extract and process this acid, so the price of star anise is largely driven by global demand for flu medicines.

Star anise is rich in antioxidants such as linalool, quercetin, thymol, terpineol, caffeic acid, coumaric acid, anethole, and kaempferol, and is high in iron. However, it is lower in vitamin C, calcium, potassium and magnesium. Other active compounds and organic acids, such as shikimic acid, fats and fibre, also provide additional health benefits when consumed with star anise. Star anise is also relatively low in calories, with only 23 calories per tablespoon.
